Holiday Wild Stuffing

  • 2 cups cooked steamed wild rice blend
  • ¼ cup chopped green onions
  • ½ small red onion, diced
  • ½ cup chopped dried apricots or cranberries
  • ¼ cup chopped red bell pepper (optional)
  • ¼ cup finely chopped celery, including the leaves
  • 4 tablespoons1 frozen orange juice concentrate, thawed
  • 3 teaspoons sugar (optional)
  • 1/4 cup canola oil
  • 1 teaspoon dried mustard
  • Salt and pepper to taste
  1. In a large sauce pan sauté the oil, garlic, onion, sugar, apricots, bell pepper, and celery over medium heat until onion is tender. Stir in the cooked wild rice.
  2. In a small bowl mix together the orange juice concentrate and mustard. Pour over the rice mixture. Stir well. Salt and pepper to taste.
  3. Use this mixture for your stuffing for the turkey if you like, or serve it as a delicious holiday side dish.

Banana Bread Delight

  • 2 cups Bob’s Red Mill white or brown rice flour
  • ¼ cup flax meal
  • 5 medium bananas
  • 1 cup superfine sugar
  • ½ cup vegetable oil
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons orange juice
  • ½ cup sulfite free dried cranberries
  1. In a food processor add the bananas and sugar. Pulse until smooth. Add remaining ingredients accept for the cranberries. Process until blended. Add in the cranberries and pulse a few times.
  2. Pour into a greased 9 inch loaf pan.
  3. Bake in a preheated 350 degree oven for 65 minutes, or until a toothpick comes out clean from the center of the loaf.
  4. Let cool for 10 minutes and then remove from pan.

Chocolate Chunk Drops

  • 1/3 cup vegetable oil
  • 1 cup packed brown sugar
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup Bob’s Red Mill white rice flour
  • 1/2 cup corn or arrowroot starch
  • 1 teaspoon baking powder
  • 3 teaspoons sugar (optional)
  • 1/4 cup water
  • 1 teaspoon dried mustard
  • 3 (1.4-ounce) EnjoyLife Boom CHOCO Boom dark chocolate bars, chopped into 1-inch (2.5-cm) chunks

Boom Choco Boom Dark Chocolate Bars

  1. Mix the oil, brown sugar, vanilla, and salt. Add the flour, starch, and baking powder and mix on low speed. While mixing, slowly pour in the water until the dough is smooth. Stir in the chocolate chunks.
  2. Use a small ice cream/cookie scoop or drop dough by tablespoon onto a baking sheet, spacing the cookies about 2 inches (5 cm) apart (about 6 cookies per baking sheet).
  3. Bake in a preheated 350 degree oven for about 12 to 15 minutes, or until cookies are golden around the edges and soft in the center. For softer cookies, remove from oven before they get too golden—around 12 minutes. Let cool on the baking sheet for less than 1 minute. Remove with a flat spatula and place on a flat surface to cool completely.
